Grilled Salmon Skewers

Ingredients:ย 

  • 1 Sockeye Filletย or 3 Portions
  • 1 Large Zucchiniย 
  • 1/2 Red Onion
  • 8 oz. Cherry Tomatoesย 
  • 2 Tbsp. Olive Oil
  • 1 tsp. saltย 
  • 1/2 tsp. ground pepperย 
  • Skewersย 

Directions:ย 

Remove the skin from the salmon fillet. Cut the salmon, zucchini, and red onion into bite-sized pieces. Season the salmon, zucchini, red onion, and cherry tomatoes with olive oil, salt, and pepper. Then, arrange onto the skewers. Grill on medium-high heat for 3 minutes, flip the skewers, then grill for another 2 minutes. Serve with your favorite sides and enjoy!ย
